Vegetable autumn salads recipes raw foodists

Here comes the harvest period. I am especially pleased with the abundance of fresh root vegetables: beets, carrots, turnips, celery root, etc. From them you can prepare autumn vegetable salads and for this you do not need to cook them at all.

Salad of beets, carrots and cabbage

We will need the following ingredients:

  • beet
  • carrot
  • cabbage
  • walnuts
  • garlic
  • lemon or apple cider vinegar
  • olive oil (or any other unrefined cold pressed oil)

Take beets, carrots and cabbage in equal amounts. Beet and carrot to rub on a thin grater, chop cabbage and not knead. Sprinkle everything with lemon juice or vinegar. Add garlic, crush nuts and season with butter. You can also add celery and parsley to taste.

If you do not use garlic and nuts, and rub the celery root, you get another, no less tasty salad.

This salad is also called “Whisk”. It is so called because it cleans the intestines, as if sweeping out of it all that is unnecessary and unnecessary. Especially useful to eat it without salt and oil.

Carrot in Peanut Sauce

For the sauce, we need:

  • handful of walnuts
  • 2-3 sprigs of parsley
  • 2-3 sprigs of celery greens (if there are no greens, celery stalks can be used)
  • garlic clove (optional)
  • half lemon juice

Mix everything in a blender, add water if necessary. Also, if desired, you can salt and add oil.

But I like this salad precisely because it is tasty and without oil, while celery gives a rather rich flavor, which is not required for salt.

Raw vinaigrette

Frankly, before I did not like the traditional salad recipe. And this option came to my taste.

Ingredients:

  • 1 beet,
  • the same sauerkraut (I leavened for 2 days)
  • 1 carrot,
  • sprouted mung bean
  • bulb onions (I used the white part of green onions)
  • dill,
  • butter,
  • sea ​​salt.

Beet and carrot to rub on a large grater, finely chop the onion, add the cabbage and mung bean, fill with butter. I used raw sunflower seed with a little black sesame oil. Black sesame oil gives this salad a special flavor.

Turnip salads

Last fall, I tried raw turnips for the first time and loved her very much.

We will need the following Ingredients:

  • 2 small turnips
  • 1 small carrot
  • leek (can be used green onions or onions)
  • dill
  • parsley
  • sea ​​salt to taste
  • sunflower oil

Chop a turnip and carrot on a large grater, cut onion and greens, season with oil and salt.
